Super Green High Protein Pasta Salad

I debated posting this because pasta salad is a pretty intuitive recipe. As you can clearly see, I decided otherwise. While an easier recipe, pasta salad is a great way to focus on your chopping skills and utilize veggies and canned goods you may have in your home. My entire goal in posting recipes and nutrition information is to make living a healthful and #vegcentric lifestyle easy! So, whether you are a total newbie, a wannabe home cook, or a seasoned pro, throwing a little pasta salad in the recipe mix is a must! As usual, this recipe is very customizable (read: don’t make a special trip to the store for just one item). I have some additional serving and ingredient suggestions below!

Serves: 4-6 (depends on pasta of choice)

Ingredients:

  • 1 box legume-based pasta (I used Banza)
  • 1/4 cup chopped white onion, green peppers, celery, and cucumbers
  • 1/4 cup chopped fresh parsley
  • 3 T olive oil
  • 2 T red wine vinegar
  • 2 T vegan mayo
  • 1 tsp Italian seasoning and dill
  • Zest of half of a lemon
  • Salt and pepper to taste (about 1 tsp each)

Instructions:

  1. Boil pasta according to package instructions, drain, and let cool
  2. Combine olive oil, vinegar, mayo, lemon zest, and seasonings in small bowl. Whisk until well-mixed.
  3. Once pasta is cool, add to a large serving bowl. Mix in chopped veggies and dressing. Combine well.
  4. Taste! You may desire a little more vinegar or salt depending on your taste preferences, but this was a pretty good tangy/salty ratio for me.

Serving/ Ingredient Suggestions:

  • If you are okay with forgoing the “super green” appearance, add in sliced olives, tomatoes, corn, etc.
  • If you don’t have red wine vinegar on hand, try champagne vinegar, white wine vinegar, rice vinegar, etc. It’s all good!
  • This can totally be made without the mayo! If you choose this route, I’d suggest adding another T of olive oil or so to achieve the desired pasta coating.
  • This recipe typically tastes best after an overnight in the fridge.
