What started out as plain, boring old pasta with red sauce, quickly became a rich, creamy pasta meal reminiscent of pasta alla vodka with a quick raid of the fridge! Only 3 ingredients are truly needed, but toppings and add-ins are both welcomed and encouraged.
If I’m being honest, this past month has been insanely busy for me, hence my minimal blog updates. Between work, moving, and all of the typical summer shenanigans (read: concerts, weddings, camping, beach trips), I have been exhausted to say the least. Today was no different. I came home from work both tired and hungry. Although I find solace and stress-relief in the kitchen, today was not going to be one of those days. I wanted something quick, comforting, and of course delicious. I scoured my fridge and noticed some precooked pasta that my boyfriend had left for me. Score. I habitually grabbed some marinara, but decided not to stop there; not to settle for basic noodles and marinara. With a few extra on-hand ingredients and a little creativity, my pasta with red sauce took a turn for the gourmet. Although this dish is so simple that I’m not sure it can even be classified as a recipe, it is pretty representative of my cooking style. - 1 serving pasta of choice
- 1/3 cup marinara sauce
- 1 Tbsp. tahini (sesame paste)
- Additional toppings (optional):
- Cooked lentils or beans
- Kalamata olives
- Arugula or other greens
- Cherry tomatoes
- Prepare pasta according to package instructions
- In sauce pan combine marinara and tahini, heat until warm
- Mix sauce with pasta
- Add toppings
